Situated in the commune of Sallèles d'Aude, "La Toulousaine des Farines" is the only mill in the south of France to produce flour. It was founded in 1994, has 31 employees and uses modern milling procedures to pass the wheat through twenty one cylces of crushing and seiving. Yields are very high, of the order of 85%.
Each year sees about 140,000 tons of 'soft' wheat transformed into flour. The wheat arrives by rail, 80% from central France and the rest from the South-West.
60% of the flour produced is exported to Africa via two Mediterranean ports, Port-La-Nouvelle and Sète. 80% of the by-products go to Spain for production of animal feedstuffs.
Annual turnover is around 150 millions of francs, 120 millions for the flour and 30 millions for the by-products. The value of its exports ranks this mill third amongst all the exporters in the region.
