The Chateau de Violet : located in the Minervois, in the heart of the Languedoc region, 25 km from
the medieval town of Carcassonne, just outside the village of Peyriac. It stands on the site of a gallo-roman villa and dates from the 11th century with additions and revisions in the 17th and 19th centuries. In 1966, the present owners bought the chateau and after extensive renovation, transformed it into a three star *** Hotel-Restaurant.
Best access is from the airport at Carcassonne (25 km) or by the A61 motorway using exit
Carcassonne west or Beziers west. Toulouse and Montpellier airports are about 110 km to
the west and the east respectively.
The Chateau is surrounded by its vineyards consisting of 40 hectares in the terroir known
as 'L'Argent Double', a region of silicious deposits in the central zone of the
Minervois, and produces fine aromatic AOC wines which keep very well.
The wine making facilities form a compact and attractive
whole together with the storage, ageing and tasting
rooms. There is also a small museum dedicated to the
history of vine growing and wine production. Visitors, whether wine loving amateurs or
passing tourists, will find this area both instructive and entertaining. Weekend
residential courses are organised for visitors to discover the local wines and
the surrounding area.
Visitors are always sure of a warm welcome from Emilie Faussié. The hotel's rooms are decorated in traditional styles with period
furnishings. The surrounding parkland, swimming pool and terrace complete the magnificent
decor.
The Chateau de Violet has a large conference room with all modern facilities to cater
for groups up to 50 persons.
The restaurant through its choice of menus or 'a la
carte' proposes an aromatic, light cuisine full of sunshine based on local
traditions. Our aim is for you to feel like part of our family in the family dining room
complete with monumental, open fireplace.
